I was craving fruit so I decided to make fruit salad with baked cinnamon chips... yum!
Plus it's super easy and mostly healthy!
Fruit Salad
- 1 apple, peeled, cored, and diced
- 1 carton of strawberries, cleaned and diced
- 2 kiwis, peeled and diced
- 1 nectarine, cored and diced
- 2 tbsp white sugar
- 1 tbsp brown sugar
- 3 tbsp strawberry preserves
I mixed all the fruit together with the sugars and preserves and put them in the fridge to chill about 15 min.
(You can use pretty much any fruit combination, these were just the ones I had on hand. You can also use any type of preserves you want!)
While it was chillaxing...
Baked Cinnamon Chips
- Preheat oven to 350 degrees
- tortillas
- butter, melted
- 1 cup sugar + 2 tbsp cinnamon, stir together in bowl
Cut the tortillas into wedges and place on a cookie sheet (I put mine on waxed paper for easy cleanup). Brush the wedges with melted butter, and sprinkle on desired amount of cinnamon sugar. Bake for 8-10 minutes. You can let cool or serve them warm with the chilled fruit salsa!
(You can use whatever size of tortilla or however many you want, it just depends on how big you want the chips or how many you want!)
It turned out to be a delicious snack that even my husband ate some with me! I'm so addicted to cinnamon I just munched on the chips by themselves... I think I missed my own point I made at the top... whoops!
